Design A Cuisine's exclusive Fine Indian Dine and Wine @ The British Club, Singapore





Design A Cuisine's Chef Yogesh Arora served up a ritzy night filled with fine dine a la holistic style that was carefully paired with a selection of wines. It was an exclusive, one of a kind experience. The unique pairing of fine Indian food and range of wines delighted patrons and proved to be a hit!


Chef Yogesh opened the night with an enlightening speech about wine's actual Indian origins. Patrons were treated course after a course of wholesome, holistic Indian cuisine and delicious wines that complemented the flavours of the meal.


Chef Yogesh was also delighted to have met Asian celebrity, Moses Lim who's a well known face amongst Singaporeans, particularly for his role in popular Singaporean sitcom, Under One Roof. The event was graced by The High Commissioner and Indian High Commissioner.


It was successful event in which Design A Cuisine was able to prove that healthy cuisine is far from bland, and eating to heal can be more fun than you think!

FOOD JOKES FROM COOKING VARIETIES

FOOD JOKES...
Last quarter of september, cooking varieties celebrates her one year old anniversary 
This time around, me not in the mood to publish recipe, me wanna share some food jokes with thee… sit back, relax and be happyyyyy…
How to crack a joke? Err err,,

My first cartoon on blogwalk is named  Fishy..ya, this first one is on fish.

Once upon a blogging  time, i had a guest post entitled, something like- "FISH  RECIPE.  STEAK RECIPE

The actual recipe ingredients and cooking method (bake) posted was on “FISH” . 
My guest post blogger added that beef can also be used instead of fish. However, if beef  is used, choose the type of beef similar/ suitable  for making steak. That is why it is named “steak recipe”, in fact there was no post on steak recipe at all.

Then….one fine day, i got one comment on this post, it said = 
“Thanks for adding steaks in my bbq parties, I thought that my party can't be end without having steaks. Everything I made by watching your bbq steak article , you made it very easily. I took double of your time for cooking.”

Next joke, I saw at Anciro’s - “Kalamay, a Philippines delicacy that you will surely love once you tasted. Not so sticky that you dont need to chew overtime....”  LOL

Here are some food tips that i came across on my rare googling spree (once in 3 months may be, i don’t  like to google much)- well i will not mention names here: The print in red are my words to explain as and where necessary.
Excerpts:
1. Treatment for scaly feet- Scrub scaly feet with Noni fruit that is cooked on the  tree (ripe) until evenly and leave for 30 minutes.
2. Also can boil, after cold- filtered and drunk
3. You need laxative for constipation- In effect, the bowel was choked up (constipation), can become smooth again (laxative).
4. The enzyme bromelain which is stored in a pineapple, is strong ammunition, that can KO-raid serious diseases (opposite of OK), such as tumors, atherosclerosis…
5. Fruit of the skin filled with gold scales (means pineapple) makes the body's defense system becomes more solid.
6. Rub on the skin of the sick with mash pineapple leaves until smooth. Just smeared on the skin of the sick, because not all people are free to consume the pineapple. The fruit of this one has side effects …..
7. (1) Large-sized tomato fruit,(2) tomato vegetable with a smaller size and (3) cherry tomatoes are just of a marble. (explained 3 different sizes of tomatoes).
8. Nutritious tomatoes eliminate wear (quench your thirst) and increase appetite to multiply out of saliva. Tomato also has antipyretic properties alias (@) lowering a fever. Benefits of tomatoes is already in rigorous long time.
9. Undoubtedly, 'Pop star' for the source of calcium is milk.
10. Logically, the right food for our bone is bone. Therefore, consuming a lot of chicken claws/ bones contain a lot of calcium (is good).
11. The body produces vitamin D in response to sunlight- that’s surprising – the sun is not technically a food OK
cooking varieties add to this:
I am not sure what time of the day, you can get the food, when the sun is vertically or horizontally, just hang on out there for the D.. if too much hanging on, your skin gets a C.  Let’s be honest, I mean a skin complications- C baby ! !
12. Salt is the main person who removes calcium in the body. The more salt you eat, the more calcium is taken away by urine. Embedded (?eat?) in low-salt diet, for good health

13. Guava actually tastes good, it’s benefits so many, but because many seeds, people are lazy to buy or to eat it. Actually, to separate the seeds with the flesh is not difficult…so eat !

14. In one advertisement at an eatery (called Chocolate Bar) , says- “Chocolate Bar offers chocolate buffet with 57 creations of chocolate. You can spoil your tongue at The Chocolate Bar!

15.  This last one  is  from cooking varieties:  At a restaurant- a guest asked the waiter. Do you serve muffins here? The waiter replied ”we serve everyone sir- including  Tom, Dick and Harry”. Welcome Mr Muffins sir, have a seat

Design A Cuisine @ The British Club, Colours of India Festival 2011

Chef Yogesh is cooking up a storm at the British Club, as part of the Colours of India festival 2011.


This evening, patrons can brace themselves for an enchanting wine dinner where our holistic,healing cuisine will be paired with a selection of exquisite wines. It's an experience not to be missed!

Chef Yogesh awed members of the Rotary Club, Singapore with his enlightening talk on healing cuisine, as well as the vibrational frequency of food during a meeting on 15th September at Holiday Inn hotel, Singapore.


His talk was powerful in changing perceptions about food, and increased awareness on holistic cuisine. He was presented a token of appreciation by the President of the Rotary Club.

Fresh homemade tomato sauce: it's worth doing it!

Do you know how to make a fresh delicious homemade tomato sauce? Have you ever tried?

The making of tomato sauce (in Italian salsa di pomodoro) definetely reminds me of my childhood summers spent in our country-house along with my family and my maternal grandparents.

My mum and my grandma sometimes were doing the "salsa" (literally means sauce and when we say the word alone it only means tomato sauce). I used to watch the process, not the entire one though, as it was very long and after a while I inevitably got bored; so I was coming and going from the kitchen from time to time.




Last week after so many years I decided to prepare once again some fresh tomato sauce. Contrary to what I used to think when I was 10, it didn't seem to me neither long nor boring. That's good! 
It took me just an afternoon (cooking time included) and the result was great! I was so proud :-)

Ingredients:
1 kg ripen tomatoes

1 onion
1 full teaspoon of salt
1/2 spoon of caster sugar

black pepper
olive oil
fresh basil
cinnamon in powder
nutmeg

1. Wash the tomatoes under running water, then roughly cut them and put them in a sauce pan together with the sliced onion. Let cook the two together for about 30 minutes on a very low heat with a lit.
2. After that
 it's time to mash them up. To help you speed up the process you can first blend the mix; this will facilitate the squeezeing phase. 
3. To squeeze them put them in a strainer. I have an electric tomato strainer (or squeezer... I am not sure how you exactly call it) so it's very easy (See the pic here on the left). When you have finished the squeezing phase, the liquid that you have gathered in the sauce pan is very watery and needs to be reduced to the proper thickness of the tomato sauce, so it has to cook again on a very low heat for at least two hours and half or until it is not watery anymore.


4. As soon as the liquid is becoming more and more "sauce" than water add all the ingredients to make it tasty: salt, sugar, a pinch of black pepper, nutmeg, cinnamon and some fresh leaves of basil. Taste it and adjust with salt and sugar if needed.

In the end add also a drizzle of extravergin olive oil... and that's pretty much it, your fresh homemade tomato sauce is ready!!!
You can use it on your pasta, bruschettas, pizza or wherever you like. You will be proud too! ;-)

VEGETARIAN FRIED CAULIFLOWER RECIPE. THE HUNDRED HEARTS AWARD FROM JULIE

FRIED CAULIFLOWER RECIPE- VEGETARIAN STYLE
Ingredients:
For 1 cup cauliflower florets and 1 medium size red tomato- slice into 8
Mince 2 pieces shallots , 2 pieces garlic and half of green capsicum
Boil some chick peas, when soft, remove skin and blend into a paste- use 3 tbsp only
1 tsp soup spice powder, salt to taste and 1 stalk curry leaves
5 tbsp water and 2 tbsp oil for frying.
Heat oil and fry minced ingredients until wilted. Add in curry leaves, salt and chick peas paste. 
Stir until shallots turn golden brown. Add in cauliflower and water. After 3 minutes, add tomatoes and cover pan with lid for another 4 minutes. Cauliflower should cook “al dente”.
Put off fire and serve hot.

MAKE A MARMALADE RECIPE. INSPIRATIONAL BLOG AWARD FROM SIE

HOW TO MAKE A MARMALADE 
What is the difference between marmalade and jam?
Marmalade is made from citrus fruits (then sweetened), jam is made from sweet fruits
Take two navel oranges, one lemon , one large  pink grapefruit and wash real clean.
Peel orange skin and slice/ chop skin thinly about 1 inch long. 

For the grapefruit and lemon, cut off  the top and base, use a vegetable peeler to get the skin.
Remove pith, seeds and as much of the side membranes as possible and slice orange flesh thinly.

Put all skin slices and cut flesh in  a pot and add 5 cups of white sugar.. Add water and bring to boil , then simmer slowly about 40-45 minutes or until  mixture thickens. 
It should  stay firm when you nudge it with your finger when tested in a cold spot/ cold plate. If it is a bit runny, boil a few minutes longer. Let cool and  then bottle- ready for use...........
